Kaatu Kambu is the native, unhybridized variety of pearl millet. This is not the polished, commercial version you see in supermarkets. It’s traditionally grown, more fibrous, and nutritionally denser — but also slightly harder in texture and stronger in taste.
Most people today consume hybrid kambu (higher yield, lower nutrition). Kaatu kambu is the opposite: lower yield, higher value.
